Soft Breakfast Taco

Breakfast is one of my favorite meals of the day. I go to sleep thinking about eating breakfast because I look forward to quiet mornings and setting up my day. Breakfast time allows me to put myself first before my time becomes someone else’s - be it school or a client. And if you’re not into cooking or trying to take some steps toward healthier habits, breakfast is a good place to start.

Part of the standard staples in my home from week to week ; or some items you’ll never find me without:

  1. Eggs

  2. Avocados

  3. Wraps/tortillas

  4. Some sort of cheese

  5. Salsa (store bought)

  6. Onions

  7. Lemons and/or limes

I can look at these 5 items and know, when I have greens in the house, I can always make a salad, a frittata or this soft breakfast taco like I did this morning.

So, a soft breakfast taco for one can look like this - ingredients and method below.

These days I’m really digging on Tumaro’s Low Carb wraps, not because they’re low carb, but they stand up to heat really well, fold easily, don’t get mushy and they have some chia seeds - and who couldn’t use a little more of that happy seed in their life!

And, listen, you can also buy store bought guacamole - if you wish - but you can also make a batch, leave the pit in the guacamole you’ve made and it’ll last 3-4 days without turning a gnarly brown. You’ll also get more mileage from your avocados, lemons, onions as separate ingredients than you would store bought guac. But whatever adventure you choose, get in the kitchen for breakfast.

This breakfast is a pretty super balanced plate option - which means it offers protein (eggs), some mixed carb/veggie/fruit love (wrap, avocado, salsa). Breakfasts like this sustain me for a few hours until I break for fruit and yogurt or lunch - depending upon the flow of my day.

Ingredients

  • 1 egg + 1 white *gonna be honest and tell you, dear reader, I have cut back on my egg consumption because my cholesterol was very slightly elevated - the good kind HDL (happy cholesterol) was super high and the bad kind was low - but the total number was higher than I’d like and whites/egg mix are a great way to still get that yolky color and I’m learning more about moderation of all the things I love

  • 1 T. shredded mozzarella

  • 1 Tumaro’s low-carb wrap or other of your choice

  • 1 T. salsa

  • 1 T. guacamole

  • Non-stick spray Method

Method

  • Spray pan with non-stick spray, heat on medium flame and cook wrap for 15-30 seconds on each side until brown and beginning to very slightly bubble and put aside

  • Scramble egg and egg white, add to hot pan, sprinkle with cheese, cooking for 3-4 minutes open and then fold over

  • Place egg in center of wrap, top with avocado and salsa, black pepper optional
